Strawberry and chocolate pavlova cake

  • 4 room temperature egg whites egg whites
  • Sugar 250 ml (1 cup)
  • Baking cream 35% 125 ml (1/2 cup)
  • Freddo Milk Chocolate chips - 200 g (approx. 1/2 lb)
  • Strawberries 375 ml (1 1/2 Cup), hulled and cut in half
  • 1 tbsp. (15 ml) corn starch
  • 1 tsp. (5 ml) white wine vinegar
  • 2 tbsp. (30 ml) unsalted butter softened preparation


  1. Preheat oven to 150 ° C (300 ° F).
  2. Using the electric beater, whisk egg whites at high speed until firm peaks are obtained.
  3. Gradually incorporate the sugar by whipping, then add cornstarch and white wine vinegar.
  4. Form a meringue circle following the directions below. Bake in the oven for 1 hour.
  5. Turn off the oven and allow the meringue to dry in the oven for 2-3 hours.
  6. Towards the end of the drying time, boil the cream in a saucepan. Away from the fire, add in the chocolate and butter stirring until they are melted and the mixture is homogeneous.
  7. Garnish the meringue with chocolate ganache and strawberries.
