Decadent marbled chocolate bread

Ingredients

For the bread:
  • 115 g (1/4 lb) Freddo dark chocolate chips
  • 500 ml (2 cups) all-purpose flour
  • 7.5 ml (1/2 tbsp) baking powder
  • 5 ml (1 tsp) baking soda
  • 1.25 ml (1/4 tsp) salt
  • 310 ml (1 1/4 cups) sugar
  • 180 ml (3/4 cup) softened unsalted butter
  • 3 eggs
  • 180 ml (3/4 cup) 2% milk
  • 10 ml (2 tsp) vanilla extract
  • 20 Freddo Chunky bite size milk chocolates, coarsely chopped
For the ganache:
  • 150 g (1/3 lb) Freddo milk chocolate chips
  • 80 ml (1/3 cup) 2% milk
  • 80 ml (1/3 cup) 35% cooking cream
  • 15 ml (1 tbsp) sugar

Preparation

  1. Preheat oven to 180°C (350°F).
  2. In a double-boiler, melt the dark chocolate chips.
  3. Meanwhile, mix the flour with the baking powder, baking soda and salt in a bowl.
  4. In a second bowl, whisk the sugar with the butter using the electric mixer until creamy. Gradually incorporate eggs, milk and vanilla. Whisk again.
  5. Stir dry ingredients into wet ingredients and whisk with the electric mixer until a homogeneous paste is obtained. Add three-quarters of the chopped bite size chocolates and stir with a wooden spoon.
  6. Transfer half of the dough to a third bowl, then add the melted chocolate. Stir.
  7. Butter a bread pan or line it with parchment paper. Using an ice cream scoop, place the two types of dough in the pan, alternating them. Equalize the surface.
  8. Bake for 1 hour 5 minutes to 1 hour 15 minutes, until a toothpick inserted in the center of the bread comes out clean. Remove from oven and let cool on a rack before unmolding.
  9. In a fourth bowl, place the milk chocolate chips.
  10. In a saucepan, mix the milk with the cream and sugar. Bring to a boil, then pour the hot mixture over the chocolat chips. Let stand for 1 minute, then stir. Add the butter cubes and stir again, until a homogeneous preparation is obtained. Refrigerate for 15 to 30 minutes.
  11. Pour the ganache over the marbled bread. Decorate with the rest of the chopped chocolate.
